Recipe for a Great Cake for the Summertime

It is the summertime, and I thought I’d provide a good recipe for food or two. So here it comes, an apple cake recipe:

1 cup sifted flour
½ teaspoon salt
1 ½ teaspoons baking powder
Six tablespoons sugar
¼ pound butter
1 egg
¼ cup milk
4 cups peeled, sliced apples
1 teaspoon cinnamon
½ cup current jelly (optional)


Sift the flour, salt, baking powder and 3 tablespoons sugar into a bowl. Work in half of the butter. Beat the egg and milk together and add, mixing until a dough is formed. Pat onto a 12 x 8 baking pan. Arrange the apples in rows. Sprinkle with the cinnamon and remaining sugar. Melt the remaining butter and pour over the top.

Bake in a 400o oven 35 minutes or until apples are tender. Brush with melted jelly if you want to. Cut into squares.

Then, to conclude, you’ll have a wonderful apple cake! And apple cakes can be quite a wonderful treat, to say the least.

Next, a great recipe for fish sticks.

3 fillets of sole
3/4 cup flour
2 teaspoons salt
1/4 teaspoon pepper
3 eggs, beaten
3/4 cup dry bread crumbs
Fat for deep frying


Cut the sole into 1-inch strips. Add the salt and pepper to the flour and roll the fish strips in the mixture. Dip fish strips in the eggs and then roll them in the bread crumbs.

Heat the fat to 380o and fry the sticks until browned. Drain and serve with ketchup or tartar sauce. Make 24 pieces.

When you're done with that, you'll have some great fish meals to dine on as well.
